Street food vending is a significant part of the urban food system in many developing countries, including Nigeria. It is particularly prevalent in Kano State, where street vendors provide affordable and accessible food to a large portion of the population. However, the informal nature of street food vending often leads to inadequate food hygiene practices, which can increase the risk of foodborne illnesses. The improper handling of food, lack of appropriate storage facilities, and exposure to unsanitary conditions are common issues among street food vendors (Abubakar & Usman, 2023). As street food is consumed by a large number of people, especially in urban areas, poor food hygiene practices can have serious public health implications. Despite these concerns, research on the state of food hygiene practices among street food vendors in Kano State is limited.
This study seeks to assess the food hygiene practices among street food vendors in Kano State, focusing on the extent to which they adhere to food safety standards, and identify the factors that contribute to poor hygiene practices.
Street food vendors in Kano State often face challenges in maintaining adequate hygiene standards due to limited resources, lack of training, and a lack of regulatory oversight. These factors contribute to the high prevalence of foodborne diseases, such as food poisoning and diarrheal infections, particularly among vulnerable populations. There is a need to evaluate the hygiene practices of these vendors to identify gaps and recommend strategies to improve food safety in the street food sector.
This study will focus on street food vendors in Kano State, specifically in urban centers. The scope will include an assessment of their food hygiene practices, challenges, and influencing factors. Limitations may include the difficulty in accessing certain areas due to informal market conditions and potential reluctance among vendors to participate in surveys or interviews.
